Specializing In Grilling Gaucho Style
WELCOME TO OUR GRILL
The “Gaucho” is the South American cowboy and “asado” the BBQ, our way of using charcoal and wood fire grilling are part of the culture. Inspired by this cultural spirit, we are proud to open our first restaurant & wine shop to enjoy free-range grass fed meats cooked over our wood fire grill paired with our curated wines. Gaucho Ranch has been promoting and educating consumers about the benefits of grass fed, hormone & antibiotic free beef for almost 25 years and now we want to share this experience with you. If you enjoy the meats selection at our restaurant you can also visit our Gaucho Ranch Retail Store or order online where you can purchase some of the various cuts from our restaurant and so much more. Our experienced grill masters are also ready to grill at your next event, we offer curated wood fire catering services that will wow your guests and make your next event a success.

OUR EXPERT CHEF
JUAN PABLO SORIA
I was born in Uruguay, a small country in South America located between Argentina and Brazil, where there are more cows than people (about a 3 to 1 ratio). Grilling is a strong cultural aspect of our identity so I grew up next to fire and grilling almost every day in the backyard of my house.
After working in Italian cuisine for many years and cooking with wood-fired kitchens and grills, I came to develop my techniques and cooking style. Interacting with fire was always part of my daily routines and doing it now at a professional level in such a primal way makes me feel at home and brings up my tradition and roots to the kitchen.
The menu we created at GR G&W is inspired by simplicity and execution. Reaching simplicity could be very challenging. Cooking meats on the grill may sound easy but finding the best meats meaning that the animals are fed naturally to preserve all the nutrients and flavor is already a big challenge to start with. Once you find them, cooking them on an open flame grill with the proper techniques to enhance their flavors and texture is the next challenge. And the very last one is to see our customers happy to come back to taste this unique combination of passion, fire, and grilling techniques in every dish we serve.
We invite you to come and enjoy the experience with us.
THE FOUNDER
PABLO LIBERATO
For Liberato, the world of art and food were inevitable paths. He left Buenos Aires to make Miami his home in the early 90’s when fashion and production industries gave Miami a new trendy world spotlight. After some years in photography and film production, and driven by his innate love for South American beef, he began his food importing business selling premium Uruguayan and Argentine beef to renowned supermarkets in New York City, such as Dean & Deluca, Garden of Eden and Balducci’s under the brand "Gaucho Ranch".
Some of his accomplishments in the culinary industry include successfully partnering with start-up restaurants such as Nina’s Restaurant, (North Miami Beach), Novecento (Miami Beach), Dolce Vita Gelato Café (Normandy Isle), and Uptown 66 Taqueria (Mimo District).
Liberato is the founder behind Miami’s Little River “Gaucho Ranch Grill Boutique”, the first meat boutique of its kind in Miami specializing in grass-fed and organic meats from around the world. Gaucho Ranch has garnered an impressive reputation and the respect of local health-conscious consumers, carnivore diet followers, sports players, top restaurants, and foodies in general.
“Gaucho Ranch – Grill and Wines” is his dream come true after 25 years of importing and distributing healthy meats and organizing catering events across the South Florida region.
“We look forward to continuing to spread the South American culture in our community from our authentic neighborhood restaurant. We hope to see you soon.”
